Beverages, liquors and rosolio
Citrus liquors: Sweet, thirst-quenching liquors, with a strong digestive quality. Prepared absolutely naturally by alcoholic maceration of Sicilian citrus peel.
Rosolio is liquor derived from rose petals, often used as a base for other liquors.
It is widespread in Sicily where, since the 16th century, it was produced in-house and offered to guests as a sign of good wishes. Various rosolio recipes have been experimented with throughout the island, among which those realised with citrus, coffee, anise and mint.
Syrups: sugar and essence based. With additions of seltzer, they make up the elemental base of thirst-quenching and digestive beverages prepared in the kiosks of Catania.
Paste bases: Made of powdered nuts (generally almonds) that are skilfully mixed with sugar and egg whites. Dissolved then, in water to prepare “Almond Milk,” for example
