Protected and Guaranteed Designation of Origin, noted with the DOCG acronym, is an Italian mark indicating a wine’s geographic origin to the consumer. The DOCG name must be indicated on the label and consists of either the geographical name of the viticultural area, or a combination of the historic name of the product and its production area. The DOCG category includes wine produced in certain geographic areas with respect to a specific, Statutory Instrument- approved production discipline. The DOCG mark is reserved for wines already recognised as DOC (Protected Designation of Origin) for at least 5 years, which are believed to be of particular value, related to their intrinsic, qualitative characteristics, with respect to the average of those wines classified in the same way, for the effect of the incidence of traditional natural, human and historic factors and if they have acquired a national and international level valorisation and business reputation. These wines, before being placed on the market, must undergo, during the production phase, a preliminary chemical-physical analysis and an organoleptic inspection to certify the respect of the requirements established by the discipline; further, the organoleptic inspection must be repeated lot by lot, even during the bottling phase. It is also provided that, for DOCG wines, a sensory analysis (tasting) be carried out by an appropriate committee; any lack of respect of the requirements will inhibit their being placed on the market with the DOCG mark.
